What is the best knife sharpening system you have come across?
I am trying to prepare a few recipes for tomorrow and all my knives are dull!
Sharpening system is different from sharpening stone, at least as it is referred in knife industry. System is a device or attachment that helps the user hold the knife at a fixed angle and optionally, with electric sharpeners do the grinding we well.
I’ll skip electric sharpeners due to their fixed angles.
From sharpening systems I’ve used Edge-Pro apex was the best. Fast cutting, super sharp edges and very versatile. Can do recurved edges, large and small blades, lately with diamond stones you can even sharpen ceramic knives with it.

If you want simple and fast setup without spending much, then nothing beats sandpaper/mousepad method. It’s simple as that. Get a few sheeths of sandpaper, start from 220 grit, then probably 400 or 600, then 1000 and finish with 2000. That will give very sharp and usable utility edge. If you want fined, especially for kitchen knives I’d get finer abrasives. I finish all of my kitchen knives all the way up to 100 000 grit. There’s no sandpaper like that, but 0.25micron sized diamond crystal spray on the leather pad will do.

Finally, about steeling, avoid grooved steel, it does more damage to the edge than good. Also, stropping does exactly the same as the smooth steel, i.e. realign the edge. It’s more gentle and effective compared to steeling. Just in the kitchen, especially pro kitchens, leather isn’t always an option.
Stones are in general one of the oldest and most effective sharpeners, but for a novice the problem is holding the consistent angle during sharpening. It does take practice to master that. Which is why I mentioned sandpaper and mousepad. Far more forgiving than stones and you get very nice convex edge.
