How long does a leg of parma ham last?
I was thinking of buying a meat slicer and a couple of legs of meat. But not too sure how long the ham will ast at home once started to slice. Does anyone have any experience with this?
What you plan to do is a good move. However now you will have to look closely at those circulars with the specials, A parma prosciutto normally is around the $11 to $13.00 area per pound. On special anywhere from $5.99lb and up.
To store, obviously you have to hang it every time after use, and once you start to slice one of those legs, you can’t just leave it for a month or two till you feel like, or you will find the exterior of the prosciutto will go green, around the fat area. There is a remedy for this. When you store it must be in a dry cool place, and use a paper towel to cover the area you just sliced before covering with cling wrap. Your Parma should last you a good three to four months, in the proper conditions.
If you can not store/hang it in a cool dry place then the lowest shelf in your fridge.
A tip for your slicer, when you go to slice your Parma Prosciutto, with a sharp knife cutting away from you, trim some of that skin back, only far enough to what you think your going to slice. That heavy skin will blunt your slicer blade in no time at all.
Your purchase would be a good one, if you don’t buy one of those special deals. I was lucky at the time, I had three big commercial ones to choose from. One was from a deli that was closing down. The other a butcher, the final one was from the local classifieds, I opted for the deli slicer, rather than the one from the butcher, the butcher’s slicer would have gone through some heavy punishment.
