Why are my brine pickles hollow?
I’ve been soaking 3 inch cucumbers in brine for 14 days.
I’ve drained, washed and about to soak in alum for 24 hrs after I cut them in large slices. Why are they hollow.
My mother’s weren’t hollow and we use same recipe.
Tomorrow I’ll cover with sugar and spices for two weeks.
The cucumbers were at fault- they grew too large and became hollow. Next time get pickling cucumbers that are heavy for their size
