Knife Colori
Can you use an engraver on color-coated knives?

I recently bought some Kuhn Rikon Colori knives for my baking class and we’re required to engrave them with our names using a hand-held engraver provided by the teacher. I’m not sure if the engraver would damage the color on my knives or not, so I was wondering: Is it possible to use an engraver on colored knives without risking damaging the color?

I’d have to assume it’s anodized carbon steel, so engraving should be fine though you’re opening it up to rust. Where the exposed edge can be quickly cleaned of rust with a few strokes of a sharpener, an engraved area cannot. I would much prefer to engrave the handle if it were mine. The tool will work the same on plastic/composite as it does metal.

It all seems a bit overboard for a baking class though. I know a few chefs who would rather you insult their wives than “destroy” their knives in this manner.
