Why do pple say it’s better to rip up the lettuce for a salad by hand instead of cutting it ?
and why are you supposed to use those wooden bowls and utensils? i think i heard somebody say that lettuce reacts badly with metal bowls and knives….but that seems so weird i might just be imagining it….why would metal be bad for lettuce?
When you cut lettuce with a knife, you actually cut the cells of the leaf which means that the cuts go brown very quickly. When you tear the lettuce, it “breaks” where the cells join, so the cells themselves aren’t damaged and the tear doesn’t go brown.
It’s not the lettuce that reacts badly with the metal utensils, it’s the vinegar in the dressing… assuming you’re using oil & vinegar dressing. Vinegar is an acid that attacks the metal, making the dressing taste metallic. Tomatoes are also acidic, so in general avoid using metal utensils for salads.
