What sushi/sashimi can be prepared from southeastern American river fish?
If I were to go fishing, would any of these fish make for good sushi? I’m new to Asian cuisine so excuse me if this is an ignorant question!
Saltwater fish were commonly used for sushi/sashimi. Japanese do eat sushi/sashimi made with freshwater species. But those fish were usually very carefully selected and prepared with extreme care because the chances of FRESHWATER fish containing parasite are MUCH higher than saltwater species.
I REALLY DON’T THINK YOU WANT TO EAT A RAW FRESHWATER FISH.
PS: Ask a question about “sushi grade” fish here. I guarantee you’ll get A LOT of garbage answers because what sounds and feels right aren’t always right sometimes. The most common garbage answer you’ll get: “The fresher the better”. Nothing is fresher than a live fish correct? Live fish could also contain live parasites correct? A lot of live fish aren’t sushi grade.
