Do I need special tools to cook Sous Vide?
I see a lot of very expensive vac sealers and immersion circulators
Yes and No. Mostly no.
You’ll need a method by which you can maintain a water temperature and a method of sealing the food against the water. Fortunately, both of these are available at your local grocery store.
For the plastic bags, use freezer-grade zip-top bags and for the water, use your BIGGEST pot (3-5 gal minimum) and a digital, probe thermometer in the water to maintain the water temp.

As a good rule of thumb, cook Poultry at 165f and hard vegetables at 185f. Cooking times vary depending on the thickness of the item being cooked.
