
Food Vacuum Sealer – How to store fruit and veg?
Hi All
Ive bought a new vacuum food sealer, and want to store fruit and veg (from any fruit to all salads etc)
They say I should blanch it etc, but i know from experience freezing fruit and veg is a mistake, also i want to store in fridge and keep for weeks on end, is that possible?

If blanching is the way for fruits and veg, then which can i use from the freezer as cold fruit and veg, as in a salad, rather than having to cook them once theyre out of the freezer?
also once i take the fruit and veg from the freezer how do i defrost or do i cook straight away? or let it melt and use cold in salads etc?
If you want to store vegetables and fruit for weeks freezing is the best option. Other than canning.
Blanching will stop or slow the ripening of fruits and vegetables. Freezing slows the process even more. Done correctly there should be no problems. With some fruits and vegetables the thawed product will be better used for sauces or stews than used whole.
the Vacuum sealer will remove air and slow the ripening process a bit but not enough to allow you to keep soft fruits and vegetables for weeks on end. Things like berries, mushrooms, leafy greens are best purchased and used right away.
The vacuum sealers are great for meats, cheeses, cold cuts and the like for either freezer storage or longer term storage in the refrigerator. but again not weeks on end. It may possibly add a few more days to the storage.
Blanching a vegetable does not cook it all the way. You would cook the vegetable from the freezer just like you would a packaged frozen vegetable.
Onions and peppers tend to get a bit mushy from the freezer do use them only for soups and sauces.
Fruits from the freezer can be used in smoothies, milk shakes from the frozen state. For cobblers, pies, cakes and the like do not thaw just add to recipe and bake. For fruit sauces cook from frozen. If the recipe calls for cornstarch, arrow root or other thickener add just a bit more as the frozen fruits will exude more juice as they thaw.
I would not use frozen/thawed fruits or vegetables in a fresh salad.
If you are interested in preserving fruits and vegetables you can also dehydrate them. Dehydrated fruits and vegetables can be used in any number of recipes. Dehydrated fruits and vegetables often have a more intense flavor as the water has been removed. As well as dehydrating fruit leathers and vegetable leathers can be made. (think of the kids and the fruit roll-up that are so popular)
